Primitive of Salento IGP, 13 degrees.

The first product of our company.

The harvest is manual and takes place in early September. The yeasts are native and the processing takes place according to artisanal methods.

The grapes, followed in a tradition, are left to macerate for a few hours and then immediately separate the must from the grapes, obtaining a soft product. The must is fermented at a controlled temperature (20-22 °C), thus refining the aromas possessed. The ripening, which lasts a few months, takes place in vitrified underground pots and steel silos. Ready for bottling, the wine is cold stabilized and bottled at low temperature so that its natural characteristics are not altered.
